Sunflower oil

Sunflower oil is pressed or extracted from sunflower seeds and is often refined for a mild taste. Conventional oil is rich in linoleic acid, an unsaturated fat. It is used in bottled cooking oil, dressings, baked goods, snacks, sauces, and fried foods.

Human substitution evidence is generally reassuring, while mixed small studies, residual seed proteins and processing-related compounds leave specific uncertainties without establishing broad harm from ordinary sunflower-oil consumption.

Sunflower oil supplies mainly unsaturated fat, and its effects depend on the foods it replaces, its composition, and how it is used. Controlled feeding evidence supports lower LDL cholesterol when unsaturated oils replace butter. A trial of sunflower oil versus palm oil also found less liver-fat accumulation during deliberate overfeeding. Other small trials found greater improvements with sesame or camelina oils for selected markers.

A 2024 review suggested less favorable weight changes than some other oils, but methodological weaknesses reduce confidence. A 2026 hospital study linked sunflower use with vascular disease; diet changes after diagnosis and other differences between patients prevent a causal conclusion. A 12-week sunflower trial found no change in most measured cardiovascular, kidney, or inflammatory markers, but it had substantial dropout. Prolonged frying and repeated industrial heating can degrade the oil or form contaminants.

Rare allergy is possible when residual seed proteins remain. EU contaminant limits apply, and Louisiana requires a food-service seed-oil notice from January 2028. Explicit high-oleic and mid-oleic sunflower oils have different compositions and need separate assessment.
