Calcium phosphates
Calcium phosphates are mineral salts used to help foods rise, prevent clumping, control acidity or add nutrients. The family includes monocalcium, dicalcium and tricalcium phosphate. Their effects depend on the salt, the amount eaten and the balance of calcium and phosphorus.

Calcium-phosphate food uses have limited direct long-term human evidence; total phosphorus intake, the particular salt and kidney function matter, and short-term mineral changes do not by themselves establish clinical disease.

Calcium phosphates supply calcium and phosphorus, but the different salts do not behave identically in food or digestion. Short human trials of one calcium-phosphate form found no significant rise in fasting blood phosphate, even with added phosphorus; these small studies cannot establish long-term safety. Other phosphate-loading trials show changes in blood phosphate and hormones that regulate minerals, while a single-meal study found no added inflammatory response. High-phosphate mouse diets can damage bone, and a calcium-matched rat study using tricalcium phosphate exaggerated exercise-related blood-pressure responses; these results do not establish harm from ordinary food use.
Total intake and kidney function matter: EFSA’s intake guidance excludes people with moderate or severe kidney impairment. EFSA and JECFA use different group intake values, expressed as phosphorus from all dietary sources, rather than the weight of one additive. Their assessments also differ from EPA’s finding that calcium-salt-specific long-term evidence is inadequate. Food permissions include purity requirements and use conditions; they do not establish safety at every dose.
The review considers uncertainty about cumulative exposure and long-term effects, particularly in vulnerable people, while avoiding claims that these salts cause cancer or that all forms are fully absorbed.
