The main concern is allergic reaction to remaining peanut protein, particularly in unrefined oil or when refining is unknown, while repeated heating and contamination create separate exposure concerns that depend on the product and its handling.

Peanut oil contains mainly unsaturated fats, with proportions that vary by cultivar. High oleic oil has a different fatty acid profile; it is not a guarantee of allergen removal. Refining usually removes most peanut protein, while unrefined and cold-pressed oils can retain enough to trigger reactions in peanut-allergic people. An older blinded challenge reported no reactions to refined oil among 60 allergic participants, but six reacted to crude oil.
That result does not guarantee every product or person is protected. A 2024 FAO/WHO assessment emphasizes residual-protein measurement and exposure uncertainty. A 2025 severe-allergy case adds caution, although the oil grade was unknown and an oral oil challenge was not performed. In a one-year human trial, peanut, corn, and blended oils produced no significant differences in measured cardiovascular risk markers.
Recent animal studies have mixed metabolic findings and do not establish ordinary-use human disease. Repeated heating produces oxidation products; quality controls also address aflatoxins and contaminants formed during refining. Peanut-allergic people need product-specific information and their allergy care plan.
