Sodium acid pyrophosphate
Sodium acid pyrophosphate is a sodium salt used with baking soda to help doughs and batters rise. Also called SAPP or E450(i), it can control acidity, limit discoloration and maintain texture in processed foods. It contributes phosphorus to the diet.

The review considers cumulative phosphorus exposure, kidney vulnerability and limited direct studies reporting mineral and immune effects; typical food intake has not been shown to cause SAPP-specific chronic disease.

Sodium acid pyrophosphate contributes to total phosphorus intake, which matters most when the kidneys cannot remove phosphorus well. EFSA set a group daily value of 40 milligrams of phosphorus per kilogram of body weight from all sources. Its estimates exceeded that value in some younger groups and high consumers; the value does not cover moderate or severe kidney impairment. A small 2025 study gave SAPP capsules to people with systemic sclerosis.
It found temporary increases in blood phosphate and gastrointestinal symptoms, including vomiting and repeated nausea in individual participants. The study was short, lacked a placebo and used medicinal dosing rather than ordinary food portions. A 90-day rat study reported immune and spleen changes, and a related laboratory study found cell injury and DNA damage. Their full methods could not be verified, which limits confidence without erasing the findings.
Broader phosphate feeding studies show changes in mineral handling, but results are mixed and do not establish SAPP-specific chronic disease. The review considers cumulative exposure, kidney vulnerability and these incomplete direct findings. Permitted food use does not mean unlimited intake, and no qualifying broad food-safety ban was verified.
