Soybean Oil
Soybean oil comes from soybeans and is often refined for a mild taste. It is rich in unsaturated fat, including linoleic acid. Cooks and food makers use it to fry foods and in baked goods, dressings, sauces, spreads, and packaged foods.
Why PRūF tracks it
The main concerns are residual soy protein in less-refined oil, refining contaminants, and products of repeated heating, while mouse metabolic and intestinal findings have not established harm from ordinary human consumption.

Conventional soybean oil supplies mostly unsaturated fat, and its health effects depend partly on what it replaces. A large 2025 study linked higher soybean-oil intake with lower mortality, but questionnaires and residual differences between consumers prevent causal conclusions. FDA permits a qualified heart-disease claim when soybean oil replaces saturated fat without adding calories. A small four-week trial found no significant increase in inflammation or oxidized LDL; it had industry funding and few usable blood samples.
A September 2026 trial in adults with fatty liver found no significant liver-fat difference between soybean and palm oils after adjustment for starting liver fat. Mouse studies raise metabolic and intestinal concerns, but their diets and disease models do not establish harm from ordinary human consumption. Less-refined oil may retain allergenic soy protein; highly refined oil has separate allergen-labeling treatment. Refining contaminants and deterioration during repeated frying remain relevant quality concerns.
EU contaminant limits apply, with tighter limits for selected infant-food uses from January 2027. Louisiana requires a seed-oil notice from January 2028. High-oleic and chemically modified soybean oils need separate assessment.
